The standard way to get a load cell talking to a microcontroller. The HX711 amplifies the few millivolts a load cell produces and digitises them at 24 bits - far finer than the 10-bit ADC inside an Arduino - then hands the result over just two pins, a clock and a data line. Channel A takes the load cell at a gain of 128 or 64; channel B is fixed at 32 for a second sensor. It runs from 2.6 to 5.5V on under 1.5 mA, and the Arduino libraries for it are excellent.
